  • 1 pound salmon fillet

  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the orzo pasta according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in the creamed corn and vegetable broth, and bring the mixture to a simmer.
  5. Add the salmon fillet to the skillet, cover, and cook until the salmon is flaky.
  6. Remove the salmon and flake it into large pieces, then return it to the skillet.
  7. Stir in the heavy cream and cooked orzo, mixing well. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.
