  • 1 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract until fully combined.
  5. In a separate bowl, mix the flour, baking powder, baking soda, and salt together.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Fill each muffin cup halfway with batter, sprinkle with streusel topping, and then add another layer of batter on top.
  8. Top with more streusel topping and bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
