  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Add softened butter, eggs, milk, and vanilla extract to the dry ingredients and mix until smooth.
  4. In a separate bowl, mix brown sugar and cinnamon for the topping.
  5. Fill muffin liners halfway with batter, add a spoonful of the cinnamon mixture, then top with the remaining batter.
  6. Sprinkle the rest of the cinnamon mixture on top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

  • For an extra touch, add nuts or chocolate chips to the batter.
