  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the buttermilk, melted butter, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Fill the muffin cups with the batter about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, add a pinch of nutmeg.
  • Serve warm with butter.
