Cilantro Lime Shrimp Tacos with Creamy Slaw

These delicious cilantro lime shrimp tacos are topped with a creamy slaw for a fresh and zesty flavor!

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Juice of 2 limes
  • 8 small corn tortillas
  • 1 cup cabbage, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, combine shrimp, olive oil, cumin, chili powder, salt, pepper, and lime juice. Marinate for 15 minutes.
  2. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until cooked through.
  3. For the slaw, mix shredded cabbage, mayonnaise, cilantro, and lime juice in a separate bowl.
  4. Warm the corn tortillas in a skillet or microwave.
  5. Assemble tacos by placing shrimp and slaw in the tortillas.

Notes

  • Serve with extra lime wedges on the side.
  • For added spice, include diced jalapeños in the tacos.
