  • ¼ cup cocoa powder

  1. In a small saucepan, heat the heavy cream over medium heat until it just begins to boil.
  2. Remove from heat and add the chopped dark chocolate, stirring until smooth and melted.
  3. Stir in the vanilla extract.
  4. Refrigerate the mixture for 1-2 hours or until firm.
  5. Once the mixture is firm, scoop out small amounts and roll them into balls.
  6. Roll the truffles in cocoa powder or crushed nuts to coat.
  7. Place on a baking sheet lined with parchment paper and refrigerate until set.
