Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, maple syrup, and softened butter until well combined.
  3. Add the brown sugar and mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the nuts if using.
  6. Drop spoonfuls of the dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
