Cheesy Ranch Potatoes and Smoked Sausage

This dish combines cheesy goodness with hearty smoked sausage for a quick and indulgent meal.

  • 2 pounds potatoes, diced
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced potatoes, smoked sausage, ranch seasoning, and olive oil. Toss to coat evenly.
  3. Spread mixture on a baking sheet in a single layer and bake for 25-30 minutes, or until potatoes are tender.
  4. Remove from oven and sprinkle shredded cheddar cheese on top. Return to the oven for another 5 minutes, until cheese is melted.
  5. Drizzle sour cream over the dish and garnish with chopped green onions before serving.

Notes

  • This recipe can be easily customized with your choice of spices or additional vegetables.
  • For a spicier version, add jalapeños.
