- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cucumber, julienned
- 1 avocado, sliced
- 4 ounces imitation crab, shredded
- 2 tablespoons sesame seeds
- 1 nori sheet, cut into strips
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Mix with cooked rice.
- Allow the rice to cool slightly. Then, layer rice, cucumber, avocado, and crab in bowls.
- Sprinkle with sesame seeds and garnish with nori strips before serving.
