California Roll Sushi Bowls

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 4 ounces imitation crab, shredded
  • 2 tablespoons sesame seeds
  • 1 nori sheet, cut into strips

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Mix with cooked rice.
  4. Allow the rice to cool slightly. Then, layer rice, cucumber, avocado, and crab in bowls.
  5. Sprinkle with sesame seeds and garnish with nori strips before serving.

Notes

  • For a vegan option, substitute imitation crab with tofu.
