  • 2 cups diced potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sautéing until translucent.
  3. Add broccoli and potatoes, stirring to combine.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
