- 8 ounces pasta
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- Cook the pasta according to package directions; drain and cool.
- In a large bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, Greek yogurt, olive oil, cumin, salt, and pepper.
- Add the cooled pasta to the bean and corn mixture.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
