Black Bean and Corn Pasta Salad with Lime Greek Yogurt Dressing

A refreshing pasta salad featuring black beans, corn, and a tangy lime dressing.

  • 8 ounces pasta
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package directions; drain and cool.
  2. In a large bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
  3. In a separate bowl, whisk together lime juice, Greek yogurt, olive oil, cumin, salt, and pepper.
  4. Add the cooled pasta to the bean and corn mixture.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad is best served cold.
  • Add more lime juice for extra tanginess.
