Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, soften the cream cheese and blend with a bit of the muffin batter.
  6. In muffin tins, alternate layers of muffin batter and cream cheese mixture, swirling to create a marbled effect.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
