Baked Potato Soup

A hearty and creamy baked potato soup topped with crispy turkey bacon and savory chicken ham.

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 cup chicken ham, diced
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Wash and bake the potatoes in a preheated oven at 400°F for about 1 hour or until tender.
  2. Once baked, let them cool slightly, then scoop out the insides and mash.
  3. In a large pot, melt butter and sauté garlic and onion powder for 2 minutes.
  4. Add the chicken broth, milk, and mashed potatoes, stirring well to combine.
  5. Simmer for 10-15 minutes, then stir in sour cream, cheese, turkey bacon, and chicken ham.
  6. Season with salt and pepper, cooking until heated through.
  7. Garnish with green onions before serving.

Notes

  • This soup can be topped with additional cheese and bacon for extra flavor.
  • Feel free to add other vegetables like broccoli or corn for a twist.
