Baked Egg Boats Recipe

Baked Egg Boats are a delightful dish featuring turkey bacon and chicken ham, perfect for breakfast or brunch.

  • 2 large avocados
  • 4 large eggs
  • 4 slices turkey bacon
  • 4 slices chicken ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the avocados in half and remove the pit.
  3. In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
  4. In the same skillet, sauté the chicken ham for a couple of minutes.
  5. Place the avocado halves in a baking dish and drizzle with olive oil.
  6. Crack an egg into each avocado half.
  7. Top with turkey bacon, chicken ham, and shredded cheese.
  8. Season with salt and black pepper.
  9. Bake in the oven for 15-20 minutes or until the eggs are set to your liking.
  10. Remove from the oven and serve warm.
