Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon ginger, minced
  • 4 scallions, chopped
  • 2 cloves garlic, minced
  • 5 ounces rice noodles
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. In a large pot, combine chicken broth and water, and bring to a boil.
  2. Add chicken thighs and cook until fully cooked, about 20 minutes.
  3. Remove chicken, shred, and set aside. In the same pot, add ginger, scallions, and garlic.
  4. Let it simmer for 5 minutes to enhance flavors.
  5. Add rice noodles and cook according to package instructions.
  6. Stir in soy sauce and sesame oil, then return shredded chicken to the pot.
  7. Season with salt as needed, serve hot.

Notes
