  • 1/2 cup apple sauce
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup chopped apples
  • 1/2 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix pumpkin puree, apple sauce, eggs, and vegetable oil until well combined.
  3. Add sugar to the pumpkin mixture and mix until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chopped apples.
  7. Fill muffin cups about 3/4 full with the batter.
  8. Sprinkle the streusel topping evenly over each muffin.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
