Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, pumpkin puree, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the eggs, oil, and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the apple, oats, and nuts.
  5. Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
